In only two years after arriving on the west side of Chicago in Oak Park a small retail meat market and butcher shop open to serve the community. it was owned by a gentleman named Kolschowsky, who in a decade was expanding his business to the wholesale side In another Chicago suburb, Maywood. The year was 1909.
Within a decade Mr. Kolschowsky joined a number of other immigrants and rebranded as Otto & Sons in 1928. In 1955 Ray Kroc would open the first family McDonald’s restaurant In Des Plaines Illinois. At the time Mr Croc was still a franchise agent for a San Bernardino, California company, and this would be the first step in expanding Richard and Maurice McDonald Family Restaurant.
Mr. Kroc had an agreement with the sons of Kolschowsky, Arthur and Harry, to be the supplier of fresh ground beef. This would turn out to be a match made in heaven when Mr. Kroc bought out McDonald’s and became the chief executive officer of the corporation. Otto and Sons family business became one of the primary suppliers of meat for McDonald’s.
In the late 1960s the process of flash freezing food with liquid nitrogen would bring a reduction in cost for the food industry making expansion much easier. This would ignite the way for Otto and Sons to become one of the four core suppliers for McDonald’s Nationwide chain. In 1973 Otto and Sons built the first plant dedicated solely to McDonald’s product line in West Chicago. The plant included the technology to flash freeze their product. The parts of the business that were not McDonald related we’re put into the Glenn Martin brand. The Glenmark brand continue to service retail markets and local restaurants and OSI Industries would be born.
Otto and Sons would transform into OSI Industries in 1975 as they went from local butchers to world suppliers of beef for McDonald’s, leading them to play on the world stage of preferred providers. A transition would end with 65 facilities and 17 countries and 20,000 employees, the immigrant story of hard work and rising from a small butchery to a leading World company is what their American Dream was built on, becoming OSI Industries.
